Thanks Ray, we do eat well, but low fat at the moment. Your caribbean food sounds wonderfull, this is a cuisine that we do not get exposed to in my little part of the world. Curry Tuna would be tasty and healthy, and I bet you catch your own tuna as well, how good is that

Maybe we should start a thread for recipes, there are at least 3 of us here who would enjoy trying different things

My eldest lad made supper tonight

Tuna pasta salad using tinned tuna, low fat mayo, chilli sauce, pasta, cherry tomatos, chopped cucumber, canned sweetcorn, cooked frozen peas.

First time he has ever fixed supper for the whole family, pretty good too.

Unfortunately I haven’t been tuna fishing in over a year, so I have to buy it too. Most of the tuna you catch off the Florida coast is black fin, blue fin and an occasional yellow fin. In my opinion yellow fin is the best, but almost any fresh kill fish is way better than any store bought fish.

Curry Tuna
Give this a try if you can’t get fresh, use canned white albacore tuna. I cook by eye, so you’ll have to decide on the appropriate proportions by what you like best. In a large sauté pan with extra virgin olive oil - sauté; onions, red pepper, green pepper, garlic, and fresh scallions.

On the side or before hand make a nice curry sauce that can be cooked (I use yellow curry powder to make sauce) along with hot peppers and coconut water (not the milk, but I do use the milk in other recipes).

Once your sauté is close to being cooked enough through in the tuna (this part depends on if the tuna was cooked or raw, use your judgment at the appropriate time), the curry sauce, dry powdered seasoning if needed and just before complete throw freshly chopped cilantro over it.

Serve over a bed of white rice and garnish with your favorite vegetables.

Fettucine Alfredo from the Cheesecake Factory
Rasberry white chocolate truffle cheesecake-it was good. One slice was $7 though.

My brother ordered a $10 Factory Burger, but I tried it and it tasted like a $5 burger. It was sourdough bread, Angus beef, extra sharp cheddar cheese, and a few onions. I bet I could make a better burger...
