Default Most detailed cans + player, budget ~800$

I have clip and Phonak PFE. Looking for sound signature similar to PFE with grey filters (low bass). Having read this thread I tend to lean for Sony MDR-SA5000 and HM-601. Any suggestions would be appreciated.

For the headphones, no suggestion. I don't own any extremely detailed IEMs and won't recommend what I haven't experienced. As far as the HM-601 I would suggest you read the opinions expressed in this thread from someone who has heard and tested it. It details not just test results but actual listening experience.

Hifiman players are bullshit. They don't sound any better than any other quality player, but they have infinitely worse firmware and usability.

Are you not planning to listen to music in noisy settings at all? Buy the HD 650's instead. . . and if you really want a portable set up go with a Cowon or something and a portable amp.

For noisy environments I'll use PFE. This must be a portable set up, this is the only reason I don't get stax.

I'd look into K601, DT880 and maybe HD600. Be aware that the AKGs are a little hard to drive (not quite as much as the 701s when going by the specs, but still not a terribly easy load) and thus may benefit from an amp. Sheer volume on the Clip+ should be high enough in any case, though you may get within 10 dB of maximum on classical with replaygain on.
