I'm looking at buying some Clip+ for wedding favors (meaning I'll be using stock firmware, not Rockbox) and putting Audible and iTunes audiobooks on them. What will I need to make this work/How well will this work out/is it possible?

You shouldn't need any special setup. The audiobook/podcast support on the Clip+ is very good. Same for Audible.
Follow the standard setup for Audible and make the default destination the appropriate folder and you should be good. For DRM protected files like Audible pick MTP or just leave it in Autodetect and everything should just work.
