I was thinking maybe I could use this http://www.amazon.com/i-Trek-YS-AUC-...pr_product_top and simply plug an aux cable into the MP3 player and the USB to the stereo. I have seen some cables off of google that have USB 2.0 to 3.5 mm connection but there not converters like this. I know USB is digital and 3.5 is analog.

No its not possible to make a USB to AUX adapter because, as you said USB is digital and AUX is analog. That thing you linked isn't a USB adapter, it works on phones that have a headphone jack shared with a USB connector, not a normal USB jack.

Any information on how to play the MP3 in the car would be greatly appreciated. Thank you in advance.

Basically you can get a stereo with an AUX jack, or get an FM transmitter for your player. Search the forums, theres tons of info about both options.
